Claire's Easy Supper Courgette Omelette
Ingredients—serves 2 5-6 Fresh Doddington Eggs 1-2 Kitchen Garden courgettes Kitchen Garden parsley Olive Oil Salt & pepper A little butter
Method Slice the courgettes thinly, about 1-2mm. Fry in olive oil until golden. Remove from pan. Beat the eggs well and season with salt and pepper. Add the cooked courgettes and some chopped parsley. Heat olive oil in pan and pour egg and courgette mixture in. Cook to taste. Delicious with new potatoes and a green or tomato salad |
