Job Purpose

  • To work within the Doddington Hall Catering Team creating and delivering innovative menus and ideas for our diverse client base and the mentoring of junior team members and Catering Apprentices.
  • To increase the Doddington Hall profile through outstanding delivery of catering and customer service within the Doddington Hall Catering Department outlets; Café, Restaurant, Corporate and Special Events. Creating an outstanding reputation for the food at Doddington Hall.

 

Duties and Responsibilities

  • Determine how food should be prepared and presented.
  • Create decorative food displays.
  • Collaborate with the Head Chef to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients, facilities and attendees.
  • Analyse recipes to assign prices to menu items, based on food, labour, and overhead costs, delivering a budgeted GP.
  • Meet with customers to discuss menus for Special Events such as conferences, weddings, parties and banquets.
  • Prepare and cook foods of all types, either on a regular basis or for special guests or functions.
  • Sourcing and regularly negotiating produce with local suppliers to maintain best business practice.
  • Stock management.
  • Maintaining a high standard of food hygiene and safety including food handling practices, procedures, and temperature control. Reporting of issues arising.
  • Monitor sanitation practices to ensure that employees follow standards and regulations.
  • Good business and financial acumen.
  • To carry out any other duties that may be reasonably required within the scope of the post.

 

Scope

The post holder will be responsible for the running of the Café, Restaurant and any Special Event catering operations in the Head Chef’s absence.

They will be expected to control all activities within these areas and be creative and passionate about food to maintain our substantial client base and gain new business.

The post holder will be required to work with the Head Chef to develop and manage the budget for this area along with staffing and event requirements when applicable.

The post holder is required to report anything of significance relating to their work to their line manager.

 

Person Specification

Knowledge

  • Strong working knowledge of food safety & hygiene and health & safety legislation
  • City & Guilds / NVQ qualifications desirable
  • Computer Literate
  • Food Hygiene certificate

Experience

  • Minimum three year experience working with fresh, local ingredients
  • Good track record in kitchen supervision
  • Experience of working with young people is desirable
  • Experience of managing workers, delegating responsibility and work closely with others
  • Experience of working effectively as part of a team
  • Energy, drive and enthusiasm

Required Experience

  • Run the kitchen to the highest standard at all times
  • Ensure that all dishes are prepared and presented in accordance with the Head Chef’s directions

KITCHEN PORTER

Here at Doddington, we pride ourselves on our food and hospitality. Our team of chefs produce sensational dishes using the best of the local and seasonal produce available to them including fresh fruit, vegetables and salad from our very own Kitchen Garden; beef from our herd of Lincoln Red cattle and game from the estate, as well as produce from the local area.

Working as part of a dedicated team you will be responsible for maintaining high cleanliness standards within our busy kitchens which include a very busy cafe, award-winning restaurant and wedding venue. You will also need to ensure both the kitchen and front of house teams have the utensils and pots they require. You must have the ability to work well under pressure using your own initiative.

  • Dishwashing: All dishes, ranging from pots and pans to the cutlery, are either hand washed or loaded into the dishwasher by the Kitchen Porter.
  • Delivery Organisation: Kitchen Porters are responsible for receiving deliveries and ensuring that deliveries are organised once in the kitchen.
  • Storage Management: Storage must be organised so that all ingredients are easily accessible.
  • Waste Removal: Kitchen Porters empty all trash bins and ensure that all waste is disposed of promptly.
  • Basic Food Preparation: If a kitchen is extremely busy, kitchen staff may turn to Porters to perform basic food prep.
  • Material Collection: If a chef needs materials or ingredients, Kitchen Porters collect those materials often from the kitchen garden.
  • End of the Day Clean-Up: Once a kitchen is closed, Kitchen Porters assist in cleaning to make sure that the kitchen is ready for the next day.
  • Equipment Maintenance: All equipment is cleaned and maintained by a Kitchen Porter.
  • Following Instructions: Kitchens can be chaotic, so it is important that Porters follow instructions.
  • Ensuring a Safe Environment: Cleanliness is directly related to a safe cooking environment, and Kitchen Porters ensure a safe environment by effectively cleaning all cookware and cooking surfaces.

 

Previous experience would be beneficial but not essential.
