Lettuce & Lovage Soup

This super simple and nutritious soup was one of Claire’s mother’s favourites! It’s not fussy, it’s not fancy and it’s not hard to make. If you’re looking for an easy, healthy way to eat more greens and boost your immune system then this is the perfect soup for you. It’s also a great way to use up any green leftovers.


Ingredients
Serves 8
  • Generous glug Olive or rapeseed oil
  • 1 Medium onion, finely chopped
  • 2 Lettuces, roughly chopped
  • 2 sprigs Lovage, finely chopped
  • 500g Peas or broad beans
  • 2 dessert spoons Marigold vegetable stock powder
  • 1.5 - 2 litres Water
Method
  1. Mix water and stock powder (or use your own homemade chicken or vegetable stock) and set aside for later.
  2. Cook onions slowly in oil until soft but not brown.
  3. Add in chopped lettuce and lovage and stir until it wilts and juices come out.
  4. Add peas or beans (or mixture).
  5. Add stock, bring to boil and simmer until beans/peas cooked – 2-3 mins.
  6. Blend using appliance of your choice.
  7. Taste and adjust seasoning.
Serving Instructions

Delicious with a drizzle of olive oil or crème fraîche and Welbeck flatbread.
